Chocolate Chip Keto Donuts

When I was first diagnosed with cancer, sugar was one of the first things to hit the road.  Without doing any research at all, I knew that sugar was the primary fuel for cancer cells, and also that it is a highly acidic food.  I already kept the sugar to a minimum in my diet, but I decided right away that sugar needed to be gone for good. On top of that, I now follow a pretty strict keto diet, which means that even “sugar free” baked goods are usually off limits for me.  Overall, this isn’t usually too tough for me to stick with, but occasionally, I do get a hankering for something sweet.

So, when my good friend Keto Girl posted about her keto friendly cinnamon sugar donuts, they spoke to me.  In fact, I couldn’t get those darn donuts out of my head!  It took me a couple of weeks to find the time to make them (lame, I know!), but I knew it would be a fun and healthy “treat” I could make with my girls, so when we recently had a free Sunday afternoon, we fired up the oven and made it happen.  

Keto Girl’s cinnamon sugar donut recipe came out just PERFECT, and my girls and I decided we didn’t want to stop there.  So, we made a couple of tweaks to her recipe, and came up with our own chocolate chip donuts with chocolate glaze. O.M.G. These turned out even better than we could have hoped, and, despite being sugar free, low carb, and keto friendly, my whole family has been fighting over who gets the last one…even my “keto skeptical” husband.  Shhhh…don’t tell him I told you!

Trust me, you need to make these ASAP.  


Chocolate Chip Keto Donuts
Makes 6 donuts

Ingredients:
½ cup coconut flour
½ cup powdered Swerve
¼ tsp baking soda
¼ tsp pink himalayan salt
4 eggs
2 tbsp unsweetened almond milk (or full fat coconut milk)
⅓ c melted grass fed butter or ghee
1 tsp vanilla extract
⅓ c sugar free chocolate chips (Know Foods or Lily’s)


For Topping (optional):
1 tbsp coconut oil
½ c sugar free chocolate chips (I used Lily’s because they melt so well)


Directions:

  1. Preheat oven to 350
  2. Combine dry ingredients in one bowl, and wet ingredients in another
  3. Mix wet ingredients into the dry ingredients until incorporated
  4. Add chocolate chips
  5. Grease donut molds (I used these silicone ones) and split batter evenly between 6 molds
  6. Bake at 350 for 18 minutes, or until cooked through
  7. Allow to cool completely before removing from molds
  8. Meanwhile, prepare the chocolate glaze by adding the coconut and chocolate chips to a double boiler (I use a glass bowl over a small pot of boiling water)
  9. Once donuts are removed from molds and chocolate mixture is melted, dip the donuts (I dipped the smoother side) into the melted chocolate, and then place on a cooling rack until chocolate has cooled and slightly hardened.
